One-Pot Chicken Orzo

Steps

1. 1. Brown the chicken

   • Heat 2 tbsp olive oil in a large Dutch oven over medium-high heat.
   • Season cubed chicken with 1 tsp salt and brown 4–5 minutes; transfer to a plate.

2. 2. Simmer the orzo

   • Add onion to the pot; cook 3 minutes. Stir in garlic 30 seconds.
   • Add 2 cups orzo and toast 1 minute.
   • Pour in 4 cups broth, return chicken, and simmer 12–14 minutes, stirring often, until orzo is tender.
   • Stir in spinach, lemon zest and juice, and 1/2 cup Parmesan. Serve immediately.
